Frito Pie, an Oklahoma Food Staple

Frito-Pie-1Day two in Oklahoma and I’ve realized there is a “food staple” here. A “food staple” is what we call down South a dish or entree that is a must have! For instance, “Christmas just wouldn’t be the same without food staples such as Orange Glazed Ham and Hallie’s Cheese Grits!” Apparently, Frito Pie is the “food staple” of Oklahoma, or at least Enid, Oklahoma. We eat Frito Pie down South too, but we serve it up during the fall, which of course means football! It’s hearty, full of flavor, and just plain good to eat…but is it good for you? Yeah…not so much!

Lord knows you can’t wiggle into your favorite Game Day dress without making a few sacrifices, but why sacrifice flavor?!

Good For Game Day Frito Pie
Ingredients:
1 large vidalia onion
3 to 4 Ichiban eggplants
1 or 2 cloves of garlic
1 large poblano or (for a sweeter flavor) four sweet large banana peppers
1 can of fire roasted tomatoes, diced
1-2 cups Fritos corn chips (Remember they’re salty!)
1 1/2 Tbsp of Worchestershire sauce
1 1/2 cups sharp cheddar cheese
TT Tabasco Sauce
1 Tbsp olive oil
Frito-Pie-3Directions:

 Preheat cast iron skillet on the stovetop and add olive oil. Meanwhile, slice eggplant and sprinkle salt on top of eggplant. Set aside. Dice peppers, onion, and garlic. Once oil and skillet are hot, add eggplant slices. After they cook down a bit, add onion and peppers and garlic. Cook vegetables over medium heat until they are softened and the onions begin to caramelize. Add the entire can of fire roasted tomatoes. DO NOT DRAIN! The juices add flavor! Add fritos and they will absorb all the delicious, juicy flavors. Add 1 cup of cheese and combine. Pour the entire mixture into a greased baking dish and bake in the oven at 375 degrees F for 10-15 minutes. Top with remaining cheese and bake 5 additional minutes. Serve immediately or store for up 3 days in the refrigerator. Enjoy!
