Sundays and Cold Plates

Cold-Plates-1In the summertime, my family and I often eat what Southerners call “a cold plate.” Cold plates usually consist of things like cold chicken, potato salad, cole slaw, etc. Today, we had Seasoned Tilapia Salad with Sour Cream Sauce, a cold Romaine Salad with Pickled Okra, and a roll. Cold plates are often made with heavy foods, but the flavors are so light and refreshing…it’s hard to stop eating, even in the heat.

Here’s how to make today’s showstopping entree….

 

Cold-Plates-2Seasoned Tilapia Salad with Sour Cream Sauce 

Ingredients:

For Seasoned Tilapia:
4 boneless filets tilapia
1 tsp lemon pepper seasoning
1/4 cup lemon Juice

For Salad:
1 large Vidalia sweet onion, Frenched
2 Golden Delicious apples, cored, peeled and quartered (An apple corer/slicer makes this easy!)
1 tsp dill weed
For Sour Cream Sauce:
1 cup sour cream
1/2 cup yogurt
1/4 cup lemon juice
1/4 tsp sugar
TT salt and pepper (optional)

Directions:
Make a tray (as pictured) using aluminum foil. Lay boneless tilapia filets on foil tray and season with lemon pepper seasoning and lemon juice. Grill for about 15-20 minutes. Remove tray with seasoned tilapia and let cool.

Using a fork, flake tilapia into small pieces. Prepare salad by combining tilapia with vidalia sweet onion, Golden Delicious apples, and dill weed in a large bowl. Add sour cream, yogurt, lemon juice, sugar, and if you so desire, salt and pepper to mixture.  Stir mixture gently until all ingredients are combined, cover and refrigerate. I prefer to let mine season for at least 2-3 hours, but dishes similar to this one are often better the next day! For garnish, sprinkle salad with a bit of dill weed before service. Enjoy!

**To make this even more Southern, replace tilapia with catfish and follow the recipe!
