Wichita, Kansas is looking like a Winter Wonderland right now. In the past two weeks, we’ve had the second “Worst Winter Storm” in history, Winter Storm Q. Just recently we survived a second blizzard, Winter Storm Rocky. Thankfully, it was predicted to be worse than it actually was last night. This morning is cold and bright! Looking out my window, homes, cars, even trees and fences are blanketed with snow. Light reflects off the snow, so whether it’s daytime or nighttime, Wichita seems to have constant daylight. It’s a truly beautiful phenomenon. Speaking of phenomenons, have you ever heard of a thundersnow? I’ve only seen one once here in Kansas, but I saw my second one last week! A thundersnow is similar to a thunderstorm, but instead of producing rain, it produces snow. To watch actual footage of Wichita’s 2013 Thundersnow, check out this video from CNN.

Snowbabies: Dutchbabies with Powdered Sugar
On a cold day, nothing beats a big, hot buttery dutchbaby (also known as German Pancake) with a little “snow” to top it off! According to MyFitnessPal, this recipe is 240 calories per serving. Serves 2.
- 2 large eggs
- 1/4 cup skim milk
- 1/4 cup flour
- 1 Tbsp sugar
- 1/2 tsp Vanilla extract
- 1/4 tsp salt
- 1 Tbsp salted butter
- *optional* 1/2 tsp lemon or orange zest
- 1 tsp powdered sugar
Directions:
Preheat oven to 425 degrees F. While oven preheats, combine eggs, milk, flour, sugar, Vanilla extract, and salt in a bowl. Stir until thoroughly combined. In a 6 1/2 inch diameter skillet, melt butter and grease pan evenly. Pour combined ingredients into skillet and bake for 15 minutes. When the dutchbaby is done, flip it onto a plate and serve with powdered sugar or fruit! Enjoy!
